Chicken Enchiladas


Saturday evening, I made some great chicken enchiladas for Sunday lunch. This recipe was excellent because you can make it, then refrigerate until you're ready to bake them! It is of course from Cooking Light and they were absolutely delicious...and much easier than I anticipated!!! Even with the cheese on top, its less than 500 calories a serving!
