If you're a frequent follower then you might have seen my menu for the week.  There were a few new recipes I was making, but I also promised to post my recipe for chicken noodle soup - I am keeping my promise!

But before I give you my recipe, I wanted to update on Monday's dinner - Green Chili Enchilada Bake a.k.a. "I Don't Feel Like Making Dinner" Dinner.  

Y'all,  this was so delicious!  I loved it, Brant love it and Emmalee loved it too!  For Brant and myself, I drizzled a little extra salsa verde over the top once it was on our plate, added a bit of sour cream and pico on the side and we dug in!  Since we're just a family of 3, I had left overs and brought them to work for lunch.  I think they left overs might have even been better than it was fresh out of the oven!

All this to say - GO TRY IT!  It was just divine!

Now, onto my recipe for CROCKPOT Chicken Noodle Soup.
If you are cooking for a larger family, just add more of the ingredients as you see fit.  I make this just for our family, so it is enough to easily feed 4 (maybe even 5).

You will need:  2-3 large chicken breasts (frozen); 1 lb bag of carrots (large or baby); 1 celery stalk, 1 medium onion, parsley, salt, pepper, garlic salt, basil, oregano, 2 cans chicken broth, 2 chicken bullion cubes (optional, but I add them), and noodles.  You can also add a few of your own spices if you'd like.

How to make it:  Peel & slice your carrots, chop your celery (save the leafy pieces!)., slice your onion.  In your crockpot, put your frozen chicken on the bottom, then add all of your veggies including the leafy celery pieces*, chicken bullion cubes, 2 cans broth & 2 cans water**, and your spices.  I add my spices to taste...approx. 2 TBSP salt, 1 TBSP parsley, 1 tsp garlic salt, 1 tsp basil & 1 tsp oregano and several "turns" of fresh ground pepper.  You can add more/less is  you like.  Cook on low for 6-8 hours.  DO NOT PUT YOUR NOODLE IN!

Once its ready, take your chicken out & shred it with a fork.  Add it back in.  Cook your noodles in a separate pot.  One those are ready, put some noodles in your bowl & ladle your soup on top!  I don't add my noodles to my crockpok b/c last time I did that the noodles got too soft and were almost like wet dough - yuck!  So, I cook them separately.  So delicious!

* I once heard on the Food Network that the leafy piece of celery have some of the most flavor.  Although you may not want to eat them, putting them in the broth really adds great flavor!
** The first time I made this I had actually left over chicken broth from cooking a whole chicken in my crockpot.  If you have "real" (aka NOT canned) chicken broth, use that! The flavors in that add more than any canned will!  But I have made this both ways & it is always delicious!
